How to Prepare Armenian Coffee (Soorj):

  1. Add 1 heaping teaspoon of Ani coffee per cup into a jazzve (cezve).
  2. Add sugar to taste (optional), then pour in cold water (about 3 oz per serving).
  3. Stir well, then place on low heat.
  4. Allow it to slowly heat and foam — do not stir once heating begins.
  5. Just before it boils over, remove from heat. Spoon foam into cup, return to heat briefly, and repeat.
  6. Pour slowly into a small cup. Let grounds settle before sipping.
