How to Prepare Armenian Coffee (Soorj):
- Add 1 heaping teaspoon of Ani coffee per cup into a jazzve (cezve).
- Add sugar to taste (optional), then pour in cold water (about 3 oz per serving).
- Stir well, then place on low heat.
- Allow it to slowly heat and foam — do not stir once heating begins.
- Just before it boils over, remove from heat. Spoon foam into cup, return to heat briefly, and repeat.
- Pour slowly into a small cup. Let grounds settle before sipping.
